The most tasteful and healthiest banana bread recipe

As the favourite bread on our families menu, banana bread in my house went through some serious changes and twists.

When part of Your family suffers form diabetes, and other part is vegetarian, You start to be creative with every dish You serve, every bread (yes, we like to bake!) You make and every plate You arrange.

Cooking and eating impacts us on all levels — physically, emotionally and mentally. If You are a genuine hedonist, and at the same time want to eat and live healthy, creativity awakes and BUMMMM — nerves connect to combine ingredients just so You could join this two (at least :)) opposite sides.

To be honest, I didn’t think it is something special — just a regular interest which grew to passion for creating new food experiences.

Presenting today — special and delicious, exclusive and mouthwatering, yet at the same time healthy BANANA BREAD! No sugars, no artificial colours or sweeteners, no unhealthy fats or white wheat flour ….and pure and genuine taste!

The best thing — You will need max 15 minutes to prepare it and 30 min to bake it — quick as a whip!

INGREDIENTS:

3 large bananas

1 cup of unsweetened yoghurt

1 table spoon of honey or agave syrup

vanilla extract

1/2 cup of melted coconut oil

2 table spoons of chia seeds

1 tea spoon of cinnamon

pinch of salt (himalayan preferable)

2 cups of spelt flour

1 tea spoon of baking powder or baking soda

1 cup of mixed crushed nuts / raisins / dried fruit / dark chocolate chips (of Your choice and moment of creativity :))

Turn the oven on 180°C — 356°F. Mix bananas, yogurt, coconut oil, chia seeds, vanilla extract and honey in blender. Add flour and other dry ingredients (except nuts). Combine, and then add crushed nuts. Mix it all well, and pour out to loaf pan (covered with baking paper). Insert to oven, and under any circumstances do not open it for next 30 minutes. After that You can sneak a peak, and when it is golden brown, just turn the oven off and leave it inside for 10 more minutes…

After You take it out the oven, also take it out of loaf pan (the best way — hold baking paper and just pull out).

Put on wooden board and wait for it to cool…

Enjoy feeling of accomplishment and proud when You taste that fragrant, beautiful loaf! Melting bananas, crispy nuts and mild and subtle taste of coconut will take You to other dimension — enjoy it for dinner, breakfast or as a snack! You can also spread some of delicious home made jam or peanut butter on it. In any case — take a moment, take a bite and then feel the happiness!!!
